Cabbage Saute

Ingredients
  •  1 medium onion, chopped
  • 2 tablespoons butter
  • 4 medium carrots, thinly sliced
  • 6 cups chopped cabbage
  • 1/2 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon sugar
Directions

  1. In a large skillet, saute onion in butter until tender. Add carrots; cook and stir for 2-3 minutes. Stir in the remaining ingredients; bring to a boil.
  2. Reduce heat; cover and simmer for 5-7 minutes or until vegetables are tender. Serve with a slotted spoon.
 Notes:
I buy cabbage almost exclusively to make cole slaw, then have leftover cabbage and don't know what to do with it.  This works well as a vegetable. Nothing special or fantastic about it, but it adds variety.

Roasted Parmesan Green Beans or Asparagus


"You can season them however you like, add some crushed red pepper for a little kick or even leave the parmesan off. If you want to double the recipe, I suggest using two baking sheets. Serve them immediately out of the oven for best results."

Ingredients:
  • 12 oz green beans, trimmed (make sure they are dry)
  • 2 tsp olive oil
  • kosher salt + fresh cracked pepper to taste
  • 1/4 tsp garlic powder
  • 1 1/2 tbsp shredded parmesan
Directions:

Preheat the oven to 425°F. Line a baking sheet with aluminum for easy clean-up.
Lay green beans out on the baking sheet and drizzle oil over them. Season with salt, pepper and garlic powder and toss to evenly coat.

Spread them out on the sheet so that they all lay flat and place on the lower third section of your oven. Bake 10 minutes, shake the pan to turn; bake 5 additional minutes. Remove from the oven and sprinkle with grated cheese.

Notes: I used with Asparagus.  I was broiling meat at the same time so put these on the bottom rack when the broiler was on.  Took longer than 15 minutes.  Very good.
