1 lb. shrimp
3 T. soy sauce
1 T. orange juice
1 tsp. sugar
1 T. minced fresh ginger of 1 1/2 tsp. ground ginger
1-2 garlic cloves, minced
2 T. oil
2 T. sesame seeds
1/2 red bell pepper, cut into 1/4 in. dice (mine were sliced)
1/2 c. thinly sliced green onions (2-3)
1 1/2 c. rice, cooked
Peel shrimp; de vein, if desired. In a small bowl, combined soy sauce, orange juice, sugar and ginger. Heat a wok or large skillet on high heat; carefully pour oil into pan. Add shrimp and sesame seeds, reduce heat to med-high and stir-fry for 1 minute. Add soy mixture, peppers and onions; stir-fry for 2 minutes or until center of shrimp almost turns white. Serve over rice.
I added cornstarch to the liquid, thinking it would need a thickener. It was good, but may have been fine without. Also added leftover mushrooms after the peppers and onions. Also used pre-cooked shrimp and added it at the end with the liquid.
